A Swiss physician and nutrition reformer, best known as the inventor of Bircher muesli and a pioneer of holistic whole-food nutrition. He advocated healthy eating based on fresh, plant-based foods, the avoidance of highly processed products, and a lifestyle that included regular movement, fresh air and structured daily routines. His ideas were deliberately made accessible to people of all income levels.

Original Recipe by Bircher-Benner
For one serving:
- 1 level tablespoon of rolled oats
- 3 tablespoons of water
- Soak for 12 hours
- 1 tablespoon of lemon juice
- 1 tablespoon of sweetened condensed milk, mix into a sauce
2 apples (about 400 g), preferably tart; just before serving, grate them with the peel directly into the sauce using a Bircher grater, stirring occasionally to prevent browning
1 tablespoon of grated hazelnuts or almonds sprinkled on top
